Fettuccine With Bacon-Clam Sauce

Clams, garlic, bacon and Parmesan cheese flavor this hearty pasta dish. Perfect single servings for two on a special occasion.

Ingredients

  • 4 ounces uncooked fettuccine
  • 1 can (6-1/2 ounces) chopped clams
  • 1 tablespoon butter
  • 2 garlic cloves pressed
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1/2 cup heavy whipping cream
  • 1/2 cup fresh grated Parmesan cheese
  • 4 bacon strips, cooked until crispy and crumbled

Directions

  1. Put water on to boil fettuccine noodles.
  2. Drain clams, reserving 1/4 cup juice. In a medium saucepan, combine the butter, garlic, parsley, oregano, pepper, clams and reserved juice.
  3. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  4. Stir in the cream and stir until heated, add Parmesan cheese. Continue to heat on medium until cheese is incorporated, stirring constantly. Add bacon.
  5. The sauce should lightly coat the back of a spoon if it’s thicker than desired white wine is great to thin it out. Drain the fettuccine and stir into the sauce.
