Onion Potato Soup

Originally, the recipe was given to us from an aunt and used leeks and onions. But after awhile, we got tired of buying leeks and just added another onion, couldn’t tell the difference.

Ingredients

  • 3 white onion
  • 2 Tbsp butter
  • 5 russet potatoes
  • 4 c. chicken broth
  • 1 pints heavy cream
  • 1 tsp. white pepper
  • 1 tsp. salt

How to make it

  1. In a large pot, saute the diced onion in the butter until soft and transparent.
  2. Add broth, cubed potatoes, white pepper and salt.
  3. Simmer until potatoes are fully cooked and blend everything smooth.
  4. Add heavy cream and garnish with chopped green onions.
