My siblings and I could make this recipe when we were still in elementary school. It is the basic pancake and far better tasting than any pancake mix I’ve ever had. The sensible pancake, which we got from a series of children’s books that teach you how to do things.
Ingredients
- 2 cups flour
- 1 tsp salt
- 3 Tbsp sugar
- 5 tsp baking powder
- 2 cups milk
- 2 eggs
- 1/3 cups vegetable oil (not olive oil)
- 1 Tbsp shortening
How to make it
- 1. In a large mixing bowl, beat eggs and mix in milk and vegetable oil.
- 2. Add dry ingredients and stir until most of the lumps are gone. Do not over-mix the batter because this overdevelops the gluten, resulting in rubbery pancakes.
- 3. Grill on griddle or pan, using shortening as needed to prevent sticking. Pancakes are ready to flip when the majority of bubbles on the surface don’t close up after they pop.
