Gravy from Roast

This can be made from drippings of Turkey, Beef, Chicken, Pork, etc.

Ingredients

  • 1/4 cup fat from roast drippings
  • 2½ cups broth, water, drippings (not oil or fat), or combination
  • 1/4 cup flour

How to make it

  1. Remove roast from pan. Pour out dripping / fat into measuring cup or bowl to settle. Pour 2 cups broth or water into pan and scrape pan with a wooden spoon to dissolve crusty drippings.
  2. Mix flour with 1/4 cup fat from the settled drippings into a small bowl. Skim off the rest of the fat and add remaining drippings. Add mixture to roasting pan *, stir and cook over low heat, stirring constantly, until thickened, at least five minutes.

* If your roasting pan is not appropriate for stove-top use, mix fat and flour in a large saucepan then add the liquid from the roasting pan and drippings to the saucepan. Cook over low heat, stirring constantly, until thickened, at least five minutes
