Ingredients
- 2 lb red potatoes
- 1/4 c. light olive oil
- 1 cup shredded Parmesan cheese
- 2 cloves garlic
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. Italian seasoning
Directions
- Preheat oven to 425 degrees F.
- Cut washed potatoes into 1 inch cubes and toss in a large bowl with olive oil
- Add 1/2 of the shredded cheese, the garlic either pressed or minced, and the remaining ingredients. Toss until evenly coated.
- Spread evenly on a lightly greased baking sheet and top with remaining cheese.
- Bake for 45-55 minutes tossing potatoes every 15 minutes to prevent burning.
