Parmesan Garlic Roasted Potatoes

Ingredients

  • 2 lb red potatoes
  • 1/4 c. light olive oil
  • 1 cup shredded Parmesan cheese
  • 2 cloves garlic
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. Italian seasoning

Directions

  1. Preheat oven to 425 degrees F.
  2. Cut washed potatoes into 1 inch cubes and toss in a large bowl with olive oil
  3. Add 1/2 of the shredded cheese, the garlic either pressed or minced, and the remaining ingredients. Toss until evenly coated.
  4. Spread evenly on a lightly greased baking sheet and top with remaining cheese.
  5. Bake for 45-55 minutes tossing potatoes every 15 minutes to prevent burning.
