This recipe uses both yeast and baking powder for a fast rise allowing you to go from no-buns to full-buns in an hour and a half.
Ingredients
- 1 1/4 c. warm milk
- 4 tsp instant yeast
- 2 tbsp sugar
- 14 ¾ oz. flour
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 6 tbsp melted butter
- 3/4 c. brown sugar
- 1/4 c. white sugar
- 4 tsp cinnamon
- 1/8 tsp salt
- 2 tbsp melted
- 1 tsp vanilla
- 4 oz. softened cream cheese
- 2 tbsp melted butter
- 2 tbsp milk
- 1/2 tsp vanilla
- 1/8 tsp salt
- 1/2 cup powdered sugar
Directions
- Warm the milk to about 105F. This takes about 60 seconds in the microwave with cold milk. Stir in the sugar and add the yeast. Stir it all to combine and set aside.
- Combine brown sugar, sugar, cinnamon, and salt in bowl. Stir in melted butter and vanilla and combine.
- Grease a 9-inch round cake pan.
- Whisk together the flour, baking powder and salt in the bowl of your stand mixer.
- Once the milk mixture has started to bubble, add it and the melted butter to the flour and stir to form a sticky dough.
- Mix with the stand mixer for about 5 minutes on low (#2 KitchenAid) until the dough starts to resembled a smooth ball. It may still be slightly sticky.
- On a floured work surface roll out the dough to form a 12″ by 9″ rectangle. Spread filling evenly onto dough leaving 1 inch along the long edge exposed.
- Use a rolling pin to roll out the remaining inch of exposed to even flatter (to about 2 inches) and brush the exposed surface lightly with water.
- Roll dough into a tight log up to the exposure. Use a bench scraper to lift the exposed dough up and wrap the log so the seam side is up
- Cut the log into 8 equal pieces. Place 1 bun in center of prepared pan and others around it. Brush tops of buns with remaining 2 tablespoons butter. Cover buns loosely with plastic wrap and let rise for 30-40 minutes. Pre-heat oven to 350 degrees.
- Bake the buns uncovered until tops begin to brown, 23 to 25 minutes. Move onto cooling rack, let cool for 5 minutes.
- In a large bowl, whisk together cream cheese, butter, milk, vanilla, and salt until smooth. Whisk in sugar until smooth. Pour the glaze over tops of buns.
