There’s a joke on the internet about how atheists eat babies, and if this is what they’re talking about, they’ve got the right idea. These things are a texture explosion. You’ve got soft bits, chewy bits, crispy flaky bits. Definitely worth a shot if you’ve never tried one.
Ingredients
- 1/2 c. flour
- 1/2 c. whole milk
- 2 large eggs
- 2 Tbsp. sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3 Tbsp. butter
- powdered sugar, maple syrup, jam, fruit, etc.
Directions
- Place a 10 inch cast iron skillet onto the middle rack of a cold oven. Turn oven on to 425F for pre-heating.
- Heat the milk in the microwave for about 45 seconds until it’s hot.
- In a medium mixing bowl or batter bowl, beat the 2 eggs until smooth. Pour the hot milk into the egg mixture in little bits at a time whisking vigorously to temper the eggs. Continue until the eggs and milk are fully combined and eggs did not set.
- Mix flour, sugar, vanilla and salt into the batter and whisk to combine. It should form a smooth, fairly thin batter. Leave the batter to rest 10-15 minutes.
- If the oven has not pre-heated, wait until then and then wait another 5 minutes. You want the skillet to be fully heated.
- Remove the skillet from the oven and throw in the butter. Swirl around in the pan until the butter is melted and coats the bottom and all sides of the pan.
- Pour the batter mixture into the hot butter and gently swirl until even coating the bottom of the pan. Place back into the hot oven.
- Bake for 12 or until the top is getting pretty dark brown but no spots are burned.
- Server hot, dusted with powdered sugar and whatever toppings you like.
