Shawarma Chicken and Rice

This recipe is fantastic. Really quick and easy and sooooo good.

Ingredients

  • 1 1/2 lb chicken thighs, boneless skinless
  • 2 roma tomatoes
  • 4-5 green onions
  • 1 lemon, quartered
  • 2 tsp. chicken stock concentrate
  • 1 c. jasmine rice
  • 4 pita breadys
  • 1 tsp. turmeric

White Sauce

  • 4 Tbsp mayonnaise
  • 4 Tbsp sour cream
  • 2 tsp fine garlic powder
  • 1 squeezed lemon quarter

Shawarma Seasoning

  • 2 tsp turmeric
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp fine garlic powder
  • 1 tsp paprika
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Directions

  1. Make shawarma seasoning blend by combining in a small bowl.
  2. Cook rice with stock concentrate, 1 tsp tumeric and 2 Tbsp of melted butter.
    • You can just throw it all in a rice cooker and stir it well before turning it on. Or you can cook it on the stove top.
  3. Dice the tomato, scallion greens, scallion whites, and quarter the lemon.
  4. Dice the chicken thighs and seasons with shawarma seasoning.
  5. Heat a large drizzle of oil in a large pan over medium-high heat. Add the chicken and white scallions to the pan and cook, stirring occasionally until the chicken is browned and cooked through.
  6. When the rice is done cooking, add 1/2 scallion greens and stir.
  7. Serve a bowl of rice with tomatoes, shawarma chicken and pita bread. Drizzle with white sauce, hot sauce and a squeeze of lemon. Top with remaining green scallions.
