Clams, garlic, bacon and Parmesan cheese flavor this hearty pasta dish. Perfect single servings for two on a special occasion.
Ingredients
- 4 ounces uncooked fettuccine
- 1 can (6-1/2 ounces) chopped clams
- 1 tablespoon butter
- 2 garlic cloves pressed
- 1 tablespoon dried parsley
- 1/2 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1/2 cup heavy whipping cream
- 1/2 cup fresh grated Parmesan cheese
- 4 bacon strips, cooked until crispy and crumbled
Directions
- Put water on to boil fettuccine noodles.
- Drain clams, reserving 1/4 cup juice. In a medium saucepan, combine the butter, garlic, parsley, oregano, pepper, clams and reserved juice.
- Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
- Stir in the cream and stir until heated, add Parmesan cheese. Continue to heat on medium until cheese is incorporated, stirring constantly. Add bacon.
- The sauce should lightly coat the back of a spoon if it’s thicker than desired white wine is great to thin it out. Drain the fettuccine and stir into the sauce.
