Blueberry Crisp

Ingredients

  • 24 oz (about 2 pints) fresh blueberries
  • 2 Tbsp sugar
  • 2 Tbsp flour
  • 1 tsp. lemon juice
  • pinch of salt

  • 1 c. rolled oats
  • 1/2 c. flour
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 1/2 c. melted butter
  • 2 tsp. vanilla

Directions

  1. Pre-heat oven to 375F.
  2. Add blueberries, lemon juice, 2 Tbsp flour, sugar, and a pinch of salt in a 9-inch pie dish or 2-quart casserole dish. Toss to combine
    • If you’re starting with frozen berries, microwave them for 1-1.5 minutes until they have enough moisture to hold all the flour and sugar so that it doesn’t pool at the bottom of the pan.
  3. Combine oats, flour, sugar and salt in a medium bowl. Add melted butter and vanilla and stir until flour and oats are moistened.
  4. Sprinkle topping over blueberry filling.
  5. Bake 25 to 35 minutes. Cool for 10 and serve.
