Fudgy in the center and cakey-crisp on the surface, these supernatural brownies from pastry chef Nick Malgieri are truly out of this world.
Ingredients
- 2 sticks (1/2 pound) butter
- 8 ounces semisweet or milk chocolate chips
- Can also use 1/2 c. cocoa powder instead
- 4 large eggs
- 1/2 tsp salt
- 1 c. sugar
- 1 c. brown sugar
- 2 tsp vanilla extract
- 1 c. flour, spooned into measuring cup and leveled off with knife
Directions
- With the rack in the middle of the oven, preheat to 350F and grease a 13×9 inch pan or brownie pan.
- In a medium saucepan melt the butter until it begins to foam and remove from heat. Immediately add chocolate pieces and stir until melted. Set aside.
- In a large bowl, whisk the eggs. Add the salt, sugar, brown sugar, and vanilla. Whisk until smooth.
- Slowly add the chocolate to the egg/sugar mixture whisking constantly until combined.
- Add the flour and mix until the batter is uniform. Do not over mix.
- Pour into prepared pan and bake. Rotate pan halfway through bake time.
- 30 minutes in 13×9 pan
- 20-24 minutes in brownie pan. (individual cups)
