Ubernatural Brownies

Fudgy in the center and cakey-crisp on the surface, these supernatural brownies from pastry chef Nick Malgieri are truly out of this world.

Ingredients

  • 2 sticks (1/2 pound) butter
  • 8 ounces semisweet or milk chocolate chips
    • Can also use 1/2 c. cocoa powder instead
  • 4 large eggs
  • 1/2 tsp salt
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 tsp vanilla extract
  • 1 c. flour, spooned into measuring cup and leveled off with knife

Directions

  1. With the rack in the middle of the oven, preheat to 350F and grease a 13×9 inch pan or brownie pan.
  2. In a medium saucepan melt the butter until it begins to foam and remove from heat. Immediately add chocolate pieces and stir until melted. Set aside.
  3. In a large bowl, whisk the eggs. Add the salt, sugar, brown sugar, and vanilla. Whisk until smooth.
  4. Slowly add the chocolate to the egg/sugar mixture whisking constantly until combined.
  5. Add the flour and mix until the batter is uniform. Do not over mix.
  6. Pour into prepared pan and bake. Rotate pan halfway through bake time.
    • 30 minutes in 13×9 pan
    • 20-24 minutes in brownie pan. (individual cups)
