Apple Pie

Created this recipe from heavily modifying my moms family recipe which must have been written incorrectly because its not as good as i remember it being as a child.

Ingredients

  • 2 prepared pie crusts
  • 5 granny smith
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 4 tsp ground cinnamon
  • 3 Tbsp flour
  • 4 Tbsp butter
  • 1 Tbsp lemon juice

How to make it

  • 1. Preheat oven to 350 degrees F (175 degrees C)
  • 2. Place pealed, cored and sliced apple chunks in a large mixing bowl. In a smaller bowl combine sugars, cinnamon and flour. Pour dry mixture over apples, top with soft or melted butter and lemon juice. Mix well.
  • 3. (optional) Line pie pan with first pasty shell. Then line with aluminum foil and press it down into the dough. Fill the aluminum foil with dried rice/beans or spare change and bake it for ~10-12 minutes. This will ensure that your bottom crust get cooked fully.
  • 4. Pour apple mixture into pastry-lined pan. You may have a cup or so more filling then necessary. Place second pastry on top. Seal edges and cut steam vents in top crust.
  • 5. Bake for 45 to 55 minutes, until crust is golden brown. Remove from oven and cool 1 – 2 hours.
