Shrimp Etouffee

Spicy Cajun shrimp sauce over rice. My mom found this recipe online when we were growing up and it instantly became a family favorite. It’s super easy to make and fantastic. Don’t be skeptical because it’s cooked in the microwave.

Ingredients

  • 1/4 c. butter
  • 1/2 c. chopped onion
  • 1/2 c. chopped green onion
  • 1/2 c. chopped bell pepper
  • 4 cloves minced garlic
  • 1/2 c. celery, diced
  • 1/2 c. chopped fresh parsley
  • 3 Tbsp tomato paste
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 lb shrimp meat
  • 1/4 tsp hot pepper sauce
  • 1/4 tsp cayenne pepper

Directions

  1. In a 2 quart microwave safe dish, combine margarine, onion, green onion, bell pepper, garlic and celery. Heat on High settings for 8 to 9 minutes.
  2. Stir in parsley, tomato paste, soup, shrimp, salt, hot pepper sauce and cayenne. Heat on High setting for 5 minutes.
  3. Stir and cook for another 5 minutes until mixture thickens. Serve over white rice.

Stove top instruction if you cant get over using the microwave and prefer to waste your time and effort so that your perception of the world doesn’t shatter into pieces.

  1. In a large saucepan, heat butter until melted and heated but not browned.
  2. Forget about the butter until it burns and start over. Don’t worry,  you’ve obviously got time, otherwise you would have used the microwave for all this.
  3. Add chopped onion, green onion, bell pepper, garlic and celery. Sauté for 10 minutes until everything is softened.
  4. Stir in parsley, tomato paste, soup, shrimp, salt, hot pepper sauce and cayenne. Stir to combine.
  5. Simmer for 10 minutes or until mixture thickens stirring occasionally.
  6. Serve over white rice and eat with smug satisfaction.
