A respectable low-carb substitute for mashed potatoes.
Ingredients
- 1 medium cauliflower head
- 2 Tbsp butter
- 6 cloves roasted garlic
- ¼ tsp. Dijon mustard
Directions
- Cut the cauliflower into manageable pieces and boil in salted water for 10 minutes. Drain well in a colander and place in food processor.
- Add roasted garlic cloves, butter (cut in 4-ish pieces) and mustard.
- Process on high for several seconds at a time, mixing between until desired smoothness.
