Mashed Cauliflower

A respectable low-carb substitute for mashed potatoes.

Ingredients

  • 1 medium cauliflower head
  • 2 Tbsp butter
  • 6 cloves roasted garlic
  • ¼ tsp. Dijon mustard

Directions

  1. Cut the cauliflower into manageable pieces and boil in salted water for 10 minutes. Drain well in a colander and place in food processor.
  2. Add roasted garlic cloves, butter (cut in 4-ish pieces) and mustard.
  3. Process on high for several seconds at a time, mixing between until desired smoothness.
