Meatloaf

This is supposed to be a copycat of the legendary meatloaf served at the cheesecake factory, and I think it is truly excellent. Serve it with some mashed potatoes and some buttered sweet corn and you’re there.

Ingredients

  • 1 Tbsp vegetable oil
  • 1/2 c. red onion, minced
  • 1/3 c. carrot, shredded
  • 1/4 c. red bell pepper, minced
  • 3 cloves garlic, minced
  • 3 eggs, beaten
  • 1 ½ lbs ground beef
  • 1 lbs ground pork
  • 1 Tbsp granulated sugar
  • 2 tsp salt
  • 1 Tbsp dried parsley
  • 1½ tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp ground sage
  • 1/2 tsp paprika
  • 3/4 c. whole milk
  • 1 c. bread crumbs or panko

Directions

  1. Preheat the oven to 350°F.
  2. In a medium skillet, heat the 1 tablespoon of vegetable oil and cook the
    peppers and red onion until they are soft. Add the carrot and garlic and cook for 5 minutes.
  3. In a large mixing bowl, beat the eggs. Add the ground beef and pork and mix them together.
    Add the parsley, sugar, salt, thyme, pepper, oregano, sage, paprika, the cooked vegetables, and milk. Once this is combined, add the breadcrumbs a bit at a time so they get evenly
    distributed.
  4. Press the meat mixture into a loaf pan and bake for 60 minutes. Depending on the temperature of the mixture, sometimes you might need another 20 minutes or so. Cook until internal temp registers 150 on a probe thermometer.
  5. Remove the loaf from the oven and let stand for 30 more minutes.
