This is the recipe that my grandfather made for my mom and her brothers every weekend. A classic in my family. It might actually be a Ruhlman’s Crêpes since it has a fair amount of egg in it and no butter or oil.
Ingredients
- 3 eggs
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 cup flour
- 1 cup milk
Directions
- Beat eggs. Add the flour, sugar, salt, and baking powder and mix until smooth. Then add the milk.
- Batter should be like heavy cream. Be sure all lumps are out before adding milk.
- Makes 4x 12″ pancakes.
