Bran Muffins

A hearty bran muffin with high fiber content and sweet but not too sweet.

Ingredients

  • 6 Tbsp. soft butter
  • 1/2 c. brown sugar
  • 1/4 c. molasses
  • 2 eggs
  • 1 cup milk
  • 1 1/2 c. wheat bran
  • 1 c. whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 tsp vanilla extract
  • 1 small apple
  • 1/2 cup raisins

Directions

  1. Preheat your oven to 400°F. Line 12 muffin tins with paper liners.
  2. In a large bowl, cream together the butter and brown sugar.
  3. Add the molasses and eggs, beating well until smooth.
  4. Add the milk and bran, mixing until well combined, and let rest for 15 minutes for the bran to absorb the milk.
  5. Peal and grate 1 small apple.
  6. Add the flour, baking powder, baking soda, vanilla, and salt and stir until just combined. Add the grated apple and raisins, folding them into the batter.
  7. Divide the batter evenly among the muffin tins.
  8. Bake for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

Try substituting malted barely syrup, if you have some on hand, in place of the molasses. It’s a deep and complex sweetener.

You can also substitute raisins for any other dried fruit.

If this is too much bran for you, try 1 cup of all purpose flour instead of whole wheat.
